Grandmother's recipe of this crispy relish almost like savoury granola absolutely addictive. A mixture of fried goodies, shallots, long chillies, garlic and dried shrimp. The art is in the heating of the palm sugar and tamarind to perfect consistency to get a crispy sweet and sour relish in the end. ไม่ใช่แค่ร้านอาหารที่โดนผลกระทบจากโควิดระลอก 3 ยังมีอีกหลายส่วนใน supply chain ของเราที่ต้องเผชิญปัญหา หนึ่งในนั้นคือ เกษตรกร และฟาร์มต่างๆ เรามีโอกาสมาเยี่ยมชมฟาร์มวัว คิดมีฟาร์ม (Kiss me farm) ของคุณต่อและคุณน้ำตาล ที่เลี้ยงวัว เลี้ยงปลา ปลูกผัก ความพิเศษของฟาร์มนี้มาจากการที่เป็นฟาร์มวัวจึงมีปุ๋ยคุณภาพมาบำรุงพืชผัก ระหว่างเดินทัวร์ก็ได้เห็นกองดินสีดำๆตอนแรกนึกว่าเป็นดินแกรบเผาแต่เค้าบอกว่าสีนี้ได้มาจากกระบวนการย่อยขี้วัวด้วยไส้เดือนอีกที ก่อนนำไปใช้กับแปลงผักซึ้งทำให้พืชดูดซึมสารอาหารได้ง่ายขึ้น เดินไปอีกก็เจอดอกเขียวๆลอยอยู่ในน้ำ ปรากฎว่านี่เป็นวิธีที่เค้าบำบัดน้ำแบบธรรมชาติโดยใช้ดอกจอก !! เห็นถึงความพิถีพิถันกับรายละเอียดต่างๆของพี่ๆทั้งสองชื่นชมมากๆค่ะ ความอร่อยของผลผลิตของฟาร์มนี้ไม่น่าจะต้องบอกแล้ว สุดจริงๆ! 💚💚 Shout out to our farmers who are also struggling in this third wave of Covid. We are lucky to have visited Kiss me Farm in Nakon Pathom. A cattle farm that also grows vegetables, rice and tomatoes. The uniqueness about the flavours of the produce here is from the chemical-free quality manure which inturn becomes the compost, goes through the process of being broken down by earthworms. The nutrient rich manure is fed back into the soil for plants to take up. We also stumbled upon a green flower like plant floating on the water and found out that this is their natural water filtration system. The plant is a water lettuce that filters impurities and chemicals out of the water and a good sign that the water is clean is that there is life inside. Just want to show to our appreciation for what the farmers do to create beautiful produce for us and what they are going through right now in this Pandemic. Restaurants all over Thailand are suffering but it does not end with us we need to figure out how to help the economy as a whole at the end of the day we need to rely on one another to survive. #symbioticeconomy

I’ve been making a lot of bread experimenting with different varieties of rice but I’ve always relied on active yeast. Now with the extra time, I am for the first time, using natural yeast for all my breads.. raising my own starter with rice flour. The difference in the crumb and crust is expectional!
